Harvest

when harvesting wine grapes, the best, sparse and small clusters are left in the vineyard to be overripe until harvested after 2-4 weeks depending on seasonal trends. Then the grapes are dried naturally in ventilated rooms until the established parameters are reached.

Vinification

After a selection of dried grapes and soft pressing, vinification takes place in stainless steel at a controlled temperature (15/16 °) with partial maceration of the skins that separate after a few days from the start of fermentation, which is allowed to develop until a good balance between alcohol and sugar content is obtained.

Tasting

Intense old rose tending to amber. Characteristic, complex, intense and persistent with hints of baked fruit, candied fruit and honey enhanced by its alcohol content.

Pairings

An extraordinary dessert wine, it goes well with all traditional Tuscan dry and fresh confectionery products but also pairs well with short- and medium-aged pecorino cheeses.
