Grapes

Canaiolo nero, Malvasia nera, Ciliegiolo, Alicante and other native black grape varieties, except Sangiovese.

Harvest

late September-early October, when full phenolic and technological maturity is reached in Sangiovese, Canaiolo nero and Colorino grapes.

Vinification

The must is extracted by immediate pressing of the destemmed grapes, without any days of maceration on the skins since too much color would otherwise be extracted from the skins. It undergoes alcoholic fermentation in temperature-controlled stainless steel tanks for about 20 days.

Tasting

presents a pale pink color with ruby highlights, the nose very perceptible fruits and flowers that alternate with elegance accompanying light mineral tones. On the palate the nice plumpness and the right acid vein make the wine enjoyable and fresh.

Pairings

It can be used as an aperitif or in combination with first and second courses of fish as well as white meat .
