100% Sangiovese vinified still in white
late September early October, when full phenolic and technological maturity is reached in Sangiovese grapes, as for a red wine.
the must is obtained from the soft pressing of Sangiovese grapes, and 70 percent of the mass carries out alcoholic fermentation in temperature-controlled stainless steel, while the remaining 30 percent ferments in new, medium-toast barriques, where malo-lactic fermentation also takes place.
about 6 months on its fine lees in their respective fermentation vessels; the two parts of sangiovese vinified in white are combined before bottling.
Wine with an intense, structured, broad and savory bouquet. Good persistence both on the nose and in the mouth due to its aromatic richness. Intended for bottle aging.
goes well with all kinds of fish, fresh cheeses and white meats. A curious pairing to try is with minimum 80% dark chocolate
